| Distinguishing feature: character The welche district, its inhabitants and its Munster cheese is distinguished by real character. Welcome to the Welche country ! Unlike neighbouring villages, its culture is not rooted in German tradition. Indeed Welche, a Romanic dialect, is in current usage in this district. The inhabitants share not just their cultural roots but their love for the quality of life and for the environment. |

| La Graine au Lait : more than a grain of authenticity In the welche district, la graine is traditionally a secondary farm situated on high land. During the good weather, the farmers used to go and live there to make sure that their cows enjoyed the benefits of a rich and natural food source. La Graine au Lait is a modern cheese dairy which has however remained faithful to an authentic tradition of manufacturing Munster cheese. It has evolved thanks to the good will of the Haxaire family, cheese maturers for generations since 1929. A partnership of 25 young farmers, the new cheese dairy came into operation in 1996. The Munster story In the VII century, monks came to settle around the monastery which had given its name to the town (Munster, from monastère, meaning monastery). They reared cows and used their milk to make cheese. The famous Munster cheese was born. A Munster unique to Alsace La Graine au Lait is the only Alsacian cheese dairy to manufacture and ripen its own Munster from raw milk. Indeed, the many ripening rooms in the region make their products from soft white cheese and ripened cheese, purchased outside Alsace. |
